New Head Cheese Maker Keith Blok!

The Dairy's abuzz with excitement as we welcome the new head cheese maker to the team, Keith Blok! We are so excited to have his expertise join the team.  In fact, his goals are to continue winning blue at cheese competitions in the name of Flat Creek and to double the production.  With Keith's award winning background paired with work at Darigold, Inc., one of the major US cheddar commodity producers, he's got the right stuff to reach both of these goals.  As a Canadian native, the temperatures may be different but we know that he'll soon love our 4 season weather, Southern hospitality and of course the nearly 100 sheep and and all-Jersey cow herd that will help make the star ingredient for our dairy! We'll letting Keith settle in right now, but we'll be back with more cheese-tastic updates soon.

Berry, Berry, Bo-Berry!

It's berry season at Flat Creek! We're excited to let you know the season has officially begun! We've got blueberries and blackberries at the Lodge as well as at the Farmer's Markets that we participate in.. and both in fresh and frozen varieties!

When our berry orchards start popping, our chefs starting thinking all kinds of yummy things. Sous Chef JoAnn Ealey just couldn’t wait to share her Blueberry Cobbler recipe. Enjoy!

Flat Creek Lodge Blueberry Cobbler
½ Cup butter   
1 Cup milk
1 Cup all-purpose flour
1 ½ tsp. baking powder
½ tsp. salt
1 Cup sugar
2 Cups fresh blueberries
1 tsp. vanilla

Preheat the oven to 350 degrees. Put butter in a 9x13 baking dish and place in oven to melt.  Mix together the flour, baking powder and salt in a bowl and stir in vanilla, milk and sugar to make a batter.  Remove the hot dish with the melted butter from the oven and pour the melted butter into the batter.  Spoon the berries into the dish and pour batter over the berries.

Do not stir! Place dish back in the oven and bake until the batter is browned - about 30 minutes.  

Top with whipped cream or vanilla ice cream.

Yes.  It is indeed a hot one out there, and with the first day of summer yesterday, we wanted to remind you about the Summer Sizzler Package that runs through the end of the summer, expiring on August 21st.  Hang out at the beach, take a sunrise bike ride or simply exploring the grounds is the kind of escape from Atlanta or anywhere that you'll have while visiting us at the Lodge! Our dining room gets rave reviews from our guests - just ask Jerry with the Coca-Cola Bottling Company United, Inc. who said that  "the accommodations, events and meals were outstanding!" Guests are able to make a separate reservation through the Dining Room if they'd like to add that experience.

The Mansion on Peachtree - A Dinner Featuring... Us!

Another chance for all you Atlantans to take a taste of the world of Flat Creek Lodge's dairy... this Friday, June 11, the Farm to Table Dinner at NEO at The Mansion on Peachtree will be a delight with menu highlights including items such as beet tartare, an heirloom tomato salad,
smoked scallops, succulent short ribs and a rhubarb panna cotta to finish off the night! Their Executive Sous Chef Scott Hemmerly will surely please the palates of everyone!  And... the evening will include a conversation lead by Flat Creek Lodge around the special ingredients featured in the dinner.  The dinner starts at 7:30 p.m., and is $90 per person inclusive of tax and gratuity. When it's paired with CHOCOLATE!  These two decadent Cs will both be at the All You Can Eat Chocolate event that benefits the Cystic Fibrosis Foundation.  Featuring chocolate tastings from Atlanta’s finest pastry chefs, FUZE® specialty drink tasting, a chocolate lager tasting, a chocolate cappuccino tasting, two live bands, a full dinner buffet, silent auction, cash bar and complimentary valet parking, we'll also be there supporting the event.  Sampling our signature Aztec Cheddar, we'll be there on Thursday, June 17 at Villa Christina in Atlanta. Wine & Cheese with Miss Know-It-All

Thanks to Miss Know It All's blog post about all of the cheese that she got down at the Dairy this past week! It sounds like a lovely wine and cheese to us!

Some of the cheeses that she talked about include the Drunken Deer, Low Country Gouda and Uneenodae.  The Uneenodae recently wone the Best of Class in Surface (Mold) Ripened Mixed Milk Cheese category at the recent World Championship Cheese Contest.
