Flat Creek Lodge Dairy Welcomes New Head Cheesemaker

Swainsboro, Georgia (July 6, 2010) – Open now for nearly five years and having made huge strides towards creating the South’s best cheeses, micro-dairy Flat Creek Lodge is thrilled to welcome a new head cheese maker. The honor goes to Keith Blok who brings with him the title of Scientific Cheese Technologist and more cheese competition trophies than can fit on the tiny dairy’s shelves. Mr. Blok has arrived in Swainsboro with two specific goals – to win more gold medals in Flat Creek’s name and to double the dairy’s cheese production within the year.

“Flat Creek Lodge has produced some fantastic cheeses during the past few years,” says Blok. “We’re going to keep the focus on what the dairy is already doing well, make sure all of the cheeses are at a consistent high-quality and increase production.” Mr. Blok is just the man for the job in more ways than one. Hailing from Canada, he specialized in aged cheddar for more than 25 years, winning Best in Show awards at the World Championship Cheese Contest in held in Madison, Wisconsin and pulling in wins 10 years in a row (18 years in total) at the British Empire Cheese Competition. He also spent many years with Darigold, Inc., one of the major US cheddar commodity producers. Mr. Blok had just retired from Darigold when Flat Creek Lodge convinced him to head for a warmer climate.

“We are absolutely delighted to have Keith take the helm at the Flat Creek Lodge Dairy,” says Flat Creek owner Caroline Harless. “We know we have an excellent operation here, and we’ve had plenty of positive feedback regarding our products. We just need to make more of them, and be able to do that all the time.”

The Flat Creek Lodge Dairy features an all-Jersey cow herd and nearly 100 sheep. Mr. Blok plans to continue creating cheeses from both types of milk as well as blending the two. It’s likely that the Low Country Gouda will remain on the menu, and Mr. Blok will begin reviewing other varieties to find out which ones make the most sense from both a taste and a production standpoint.

“We look forward to the new ideas that Keith will be bringing with him as we move to increase our production to accommodate the needs of our clients,” says cheesemonger Rip Williams.

At the World Championship Cheese Contest earlier this year, Flat Creek Lodge won three medals, but is already looking forward to building some new trophy shelves in the future.
